Dehydrated Sweet Corn Quality

Summary Acceptable dehydrated sweet corn was produced by both air drying and freeze drying. Sensory evaluation of the rehydrated products revealed cv. Jubilee scored highest for flavor, texture and overall acceptability and, after storage, was not significantly different from Mellogold or Trail Blazer in aesthetic appeal.

It was developed at the Horticultural Research Institute of Ontario, Vineland Station. Ears are 12- to 16-rowed with excellent tip cover and good appearance.
