A New Method for Measuring Macroparticulate Systems Applied to Measuring Syneresis of Renneted Milk Gels [PDF]
Syneresis is an integral part of cheese manufacture. The rate and extent of syneresis affect the properties of cheese. There are many factors that affect syneresis, but measured results vary because of inaccuracies in measuring techniques.

Influence of various coagulation factors on chemical composition of sera gained by centrifugation from casein gel [PDF]
Technological operations applied during curd processing influence syneresis and total solids content of cheese. Syneresis is not a simple physical process representing whey segregation due to curd contractions.

ABSTRACT Shelf‐edge deltas are commonly interpreted to record basinward facies migration across uninterrupted, gently dipping shelf margins; however, examples from mixed siliciclastic‐carbonate margins reveal more complex depositional dynamics. Periods and areas of carbonate sedimentation within mixed siliciclastic‐carbonate margins can modify shelf ...

Lack of syneresis during gelation of dense colloidal suspensions
This study reports experimental results about the shrinkage of particle networks produced by pH-induced destabilization of dense colloidal suspensions. The resulting solid networks exhibit no syneresis effects, at least prior to aging of the gel.

Mucuna pruriens as a Sustainable Functional Food: Applications From Seed to Product
This review highlights Mucuna pruriens as a nutrient‐rich legume with significant nutritional, therapeutic, and agricultural value. Its protein‐rich seeds contain essential minerals and L‐DOPA, but high antinutritional compounds require effective processing before consumption.

A low-field Nuclear Magnetic Resonance dataset of whole milk during coagulation and syneresis
We report the relaxometric dataset obtained on renneted milk during syneresis by Time-Domain Nuclear Magnetic Resonance spectroscopy (TD-NMR). Data were obtained on cow's milk provided by two different producers in two different lactation seasons (April ...

ABSTRACT Legumes are increasingly used as functional ingredients in plant‐based foods. However, their compact endogenous structure restricts techno‐functional properties. Conventional fractionation methods that isolate proteins further impair these properties and generate co‐products.

Synergistic sodium alginate and glycerol protected Lactiplantibacillus plantarum in frozen pumpkin‐carrot purée, maintaining probiotic viability above functional levels for 120 days. The formulation enabled controlled intestinal release, enhanced storage stability, and improved sensory acceptance, supporting its potential as a plant‐based functional ...
