AI‐driven and computation‐based high‐throughput methods were developed to mine novel dipeptidyl peptidase IV (DPP‐IV) inhibitory peptides from hemp seed proteins. Optimization of Enzymatic Parameters for Enhancing Branch Density and Flow Properties of Sweet Potato Starch

This study optimized the sequential enzymatic treatment of sweet potato starch using α‐amylase, β‐amylase, and transglucosidase to enhance its branch density, achieving a DB of 53.38%. Structural and physicochemical analyses showed reduced crystallinity, improved solubility, and lower viscosity, contributing to better hydrodynamic properties.
