Fluorescence of Vegetable Oils: Olive Oils
Journal of Agricultural and Food Chemistry, 2005Fluorescence spectra of undiluted extra virgin olive oil obtained with the traditional setup (right-angle fluorescence) show considerable artifacts and deformations due to self-absorption phenomena, even when the spectra are corrected for inner filter effects. On the other side, front-face fluorescence spectra are much less affected by self-absorption.

Abstract Serial intracutaneous injections of chemically pure, synthetic glyceryl trioleate (triolein) lead to the same allergic reactions as vegetable oils. The sensitization by natural vegetable oils can be attributed to fatty acid triglycerides and not to impurities. This sensitization is not accompanied by a rise of the blood eosinophils.

Lactones in autoxidized vegetable oils
Journal of the American Oil Chemists' Society, 1967AbstractIt was demonstrated that bothgamma anddelta saturated lactones are present in highly peroxidized vegetable oils. In the oils which were investigated thegamma isomers are predominant. Additional lactones also form when the hydroperoxides are reduced.

Because of the widespread use of diets low in saturated fats, many patients are restricted to the use of skim milk as a substitute for whole milk. Many of these same patients are instructed to take vegetable oil as a substitute for animal fat. The following recipe for a vegetable-oil milk was devised to meet the foregoing requirements and to provide ...
