Vinegar postbiotic solutions obtained from five red fruits processed using traditional methods exhibit different biochemical properties and antimicrobial and antioxidant effects

The study finds that rosehip vinegar postbiotic solutions (VPS) has the highest amounts of lactic acid, phenolics, and flavonoids, making it a strong nutrient and disinfectant. Different VPS types show varying antimicrobial activities: hawthorn and rosehip are effective against Candida albicans, while gilaburu excels against S. aureus. Mortality values
