Immortalization of Adipose‐Derived Stromal Cells From Japanese Black Cattle

open access: yesCell Biology International, Volume 50, Issue 8, August 2026.
ABSTRACT Adipose tissue plays a critical role in determining the characteristic palatability of Japanese Black cattle beef, including its distinctive aroma, tenderness, and flavor. These quality traits are closely associated with adipogenic differentiation and lipid metabolism; however, the underlying molecular mechanisms remain poorly understood ...

Does synchronising follicular wave emergence improve outcomes in non‐superstimulated donor cattle undergoing ovum pick‐up (OPU) for in vitro embryo production?

open access: yesAustralian Veterinary Journal, Volume 104, Issue 7, Page 447-456, July 2026.
In vitro embryo production (IVEP) is now a widely commercialised assisted reproductive technology used in cattle reproduction. The use of follicle‐stimulating hormone (FSH) to superstimulate donor cattle prior to ovum pick‐up (OPU) is generally regarded as an effective strategy to improve oocyte quality, developmental competence and increase embryo ...

Simple Spot Method of Image Analysis for Evaluation of Highly Marbled Beef [PDF]

open access: yesAsian-Australasian Journal of Animal Sciences, 2012
The simple method of evaluating highly marbled beef was examined by image analysis. The images of the cross section at the 6 to 7th rib were obtained from 82 carcasses of Wagyu cattle.

“Steak Dry Aging”: An Innovative Approach to Producing High‐Yield, High‐Quality Dry‐Aged Beef

open access: yesJournal of Food Science, Volume 91, Issue 4, April 2026.
ABSTRACT This study evaluated a novel steak dry‐aging (StDA) protocol in which portioned beef steaks were dry‐aged until reaching an average weight loss of 15% and subsequently wet‐aged to achieve a total aging time of either 14 or 28 days. The new protocol was compared with conventional dry aging (DA) for 28 days and unaged controls.

Physical and sensory properties of meltique beef steak injected with virgin coconut oil emulsion [PDF]

open access: yesBIO Web of Conferences
The consumption of animal-based protein in Indonesia remains low, necessitating efforts to increase its intake, particularly through beef. Beef contains complete nutrition content such as essential amino acids, vitamins and minerals (Fe, Zn).

Cultured Meat: A Multidimensional Review of Technological, Nutritional, Ethical, and Regulatory Advances (2020–2025)

open access: yesJournal of Food Science, Volume 91, Issue 2, February 2026.
ABSTRACT Global food systems face increasing environmental, ethical, and health‐related challenges, prompting the search for sustainable protein alternatives. Cultured meat has emerged as a promising option, offering potential benefits such as reduced environmental impact, improved animal welfare, and nutritional customization.

Haplotypes for Type, Degree, and Rate of Marbling in Cattle Are Syntenic with Human Muscular Dystrophy

open access: yesInternational Journal of Genomics, 2017
Traditional analyses of a QTL on Bota 19 implicate a surfeit of candidates, but each is of marginal significance in explaining the deposition of healthy, low melting temperature fat within marbled muscle of Wagyu cattle.

Use of Beef Semen on Dairy Farms: A Cross-Sectional Study on Attitudes of Farmer Toward Breeding Strategies

open access: yesFrontiers in Animal Science, 2022
The use of beef semen on dairy cows has been increasing steadily since 2017. We aimed to describe dairy management practices toward the use of beef semen by surveying farmers in California, the largest US dairy producer.

Genome‐Wide Association Study (GWAS) for Linear Body Measurements of Sussex Cattle (Bos taurus) at Weaning and Yearling Age in South Africa

open access: yesVeterinary Medicine and Science, Volume 12, Issue 1, January 2026.
These results show that GWAS can be a useful tool for recognising novel loci and unravelling the genetic basis of complex economic traits. Sussex cattle exhibited candidate genes (RAB31, BIRC5, TEX22, CFAP100 and LOC617705) as potential candidate genes for linear body measurement traits, which could serve as significant marker information for genome ...

Dried Rumen Digesta Pellet Can Enhance Nitrogen Utilization in Thai Native, Wagyu-Crossbred Cattle Fed Rice Straw Based Diets

open access: yesAnimals, 2019
The goal of the current research was to study the effects of a diet of dried rumen digesta pellets (DRDP) on diet utilization, ruminal microorganisms, and ruminal microbes in Thai native, Wagyu-crossbred cattle.
