Le vinificateur a de tout temps travaillé avec les gaz, en s'en méfiant, comme le gaz carbonique dont on connaît bien les risques et l'air qui peut occasionner des oxydations non désirées, et en les utilisant à son profit : le CO2 plus lourd que l'air protège de l'oxygène, et l'oxygène bien maîtrisé est un atout pour la réussite d'un vin.
