Pectoral Vessel Density and Early Ultrastructural Changes in Broiler Chicken Wooden Breast Myopathy [PDF]
In wooden breast myopathy (WBM) of broiler chickens, the pectoralis major muscles show abnormally hard consistency and microscopical myodegeneration of unknown aetiology. To date, previous studies have focused primarily on chronic WBM and ultrastructural descriptions of early WBM are lacking.

Impact of wooden breast myopathy on meat quality and myofibrillar protein functionality in chicken
Food ChemistryThe impacts of WB myopathy on the physicochemical and myofibrillar functional characteristics of chicken breast fillets were examined in this study. WB myopathy significantly increased thickness and weight of the fillets. WB severity correlated with increased surface L* and b* values, elevated pH level, decreased a* value, and reduced water-holding ...

The wooden breast myopathy is identified by the palpation of a rigid pectoralis major muscle and results in myofiber necrosis and fibrosis in fast-growing, meat-type broilers. The fibrosis in wooden breast-affected muscle is characterized by the replacement of myofibers with extracellular matrix proteins, especially fibril-forming collagens.

1. This study investigated the relationships of quality indices with the severity of wooden breast (WB) myopathy in chicken breast meat under refrigerated storage. The physicochemical properties, water-holding capacity (WHC), microbial quality and fatty acid profiles of normal chicken breast meat samples (NOR samples, n = 63), moderate WB (MWB, n = 63)

Comprehensive Reviews in Food Science and Food Safety
ABSTRACT Wooden breast (WB) myopathy is a major muscle disorder in fast‐growing broilers, affecting the entire poultry production chain and causing substantial economic losses. Current mitigation strategies rely primarily on carcass‐level identification, grading, and processing treatments.
