Encapsulation of essential oils with zein and zein/ biopolymer blends
Essential (volatile) oils are defined as a product obtained from the stems, leaves, fruits and/ or roots of herbs and spices, by distillation or mechanical processing. In recent years, food and vegetable wastes have also been used to obtain essential oils. Essential oils contain compounds such as coumarin, terpenoids and phenylpropanoids.
