Determination of Aflatoxins B1 and M1 in Milk

open access: yesJournal of Dairy Science, 1971
Abstract Cows fed contaminated rations containing the mold metabolite aflatoxin B 1 secrete low levels of aflatoxin B 1 and its metabolite aflatoxin M 1 in milk. To establish the relationship between ingested aflatoxin and milk-secreted aflatoxin, a sensitive method is needed to determine aflatoxins B 1 and M 1 in milk.

Fate of Aflatoxin M1 in Cottage Cheese

open access: yesJournal of Food Protection, 1982
Two batches of long-set cottage cheese were prepared from milk naturally contaminated with aflatoxin M1. Cottage cheese was stored for 2 weeks at 7°C. Analyses for pH, moisture content and AFM1 were done on days 0, 3, 7, 10 and 14 of storage. In comparison with the initial curd concentrations (18.3 and 20.5 μ of AFM1/kg of cheese for trials 1 and 2 ...
