Abstract The food enzyme is a cysteine endopeptidase complex, containing papain (EC 3.4.22.2), chymopapain (EC 3.4.22.6), caricain (EC 3.4.22.30) and glycyl endopeptidase (EC 3.4.22.25), obtained from the latex of unripe Carica papaya L. by Enzybel International SA. It is intended to be used in nine food manufacturing processes.

The optimized tea blend exhibited high antioxidant activity and contained significant amounts of flavonoids, tannins, polyphenols, and vitamin C. In diabetic rats, the tea formulation significantly improved glycemic control, reduced lipid profiles, and enhanced liver and kidney function.

The polysaccharides of cell walls isolated from the fleshy, edible part of the fruit of the monocotyledon pineapple [Ananas comosus (L.) Merr.] (family Bromeliaceae) were analyzed chemically. These cell walls were derived mostly from parenchyma cells and were shown histochemically to be unlignified, but they contained ester-linked ferulic acid.
