Aronia melanocarpa phenolics and their antioxidant activity

European Food Research and Technology, 2005
The purpose of the present study was to evaluate small and high molecular phenolics (tannins) and antioxidant activity of Aronia melanocarpa berries, juice and pomace in order to find new potential sources of natural antioxidants. The fruits of Aronia melanocarpa Elliot were collected in the middle of October at a plantation near Wroclaw, Poland.

Flavonoids from black chokeberries, Aronia melanocarpa

Journal of Food Composition and Analysis, 2005
Abstract Black chokeberry, Aronia melanocarpa (Michx.) Elliott (Rosaceae), was investigated for its flavonoid content. The flavanone eriodictyol 7- O - β -glucuronide ( 1 ) together with the quercetin derivatives 3- O -(6″- O - β -arabinosyl- β -glucoside) ( 2 ), 3- O -(6″- α -rhamnosyl- β -galactoside) ( 3 ), 3- O -(6″- α -rhamnosyl- β -glucoside)

Lemon juice improved color acceptance of aronia (Aronia melanocarpa) pound cake by copigmentation

Food Science and Biotechnology, 2023
Anthocyanins can be changed into dark purplish color during pound cake preparation due to high temperature and alkaline baking soda, which lowers color acceptance by consumers. To stabilize a red color of anthocyanins in pound cake enriched with aronia (Aronia melanocarpa) powder, lemon juice was added to contain final concentrations of 0, 1, 2, and 3%

Anthocyanins in Fruits of Aronia Melanocarpa (Chokeberry)

Journal of Food Science, 1988
ABSTRACT Anthocyanins from fruits of Aronia melunocap (chokeberry) were extracted with acidified ethanol and methanol and fractionated by high performance liquid chromatography. The pigment composition was very simple as there were only four compounds. Semi‐preparative HPLC,

Aronia melanocarpa as a protector against nitration of fibrinogen

International Journal of Biological Macromolecules, 2013
Fibrinogen (Fg) also known as coagulation factor I represents about 4% of the total human plasma proteins. The main function of Fg is its involvement in last phase of blood coagulation cascade, when thrombin-induced conversion of dissolved plasma fibrinogen into an insoluble fibrin clot occurs.
