Annual managerial changes cause significant changes in dromedary milk composition, microbiological quality and fatty acid profile. Dromedary camel milk is rich in unsaturated fatty acids and long chain fatty acids and has a better atherogenic index (AI) but is poor in short‐chain fatty acids.
