Analysis of Dietary Fiber of 66 Korean Varieties of Sprout Beans and Bean Sprouts
Preventive Nutrition and Food Science, 2003The present study was conducted to determine a high-fiber variety of sprout bean, bean sprout. Sixty-six varieties of Korean sprout beans, thirty varieties of Korean bean sprouts were analyzed for their total dietary fiber (TDF) using a combination of enzymatic, gravimetric methods adopted by AOAC.

Sprouting improves the flavour quality of faba bean flours
Food Chemistry, 2021Flours were made from the sprouted seeds of the low- and high-tannin faba bean cultivars Fabelle, FB9-4, Snowbird, and Snowdrop. Headspace measurements on sprouted flours found the most favourable aroma profiles following 48 h sprouting and 24 h drying at 60 °C.

Evidence for the presence of a [2Fe-2S] ferredoxin in bean sprouts
Biochimica et Biophysica Acta (BBA) - Bioenergetics, 1988An iron-sulfur protein with properties similar to those of ferredoxins found in the leaves of higher plants has been isolated from bean sprouts--a non-photosynthetic plant tissue. The bean sprout protein has a molecular mass of 12.5 kDa and appears to contain a single [2Fe-2S] cluster.

Scanning electron microscopy of native biofilms on mung bean sprouts
Canadian Journal of Microbiology, 2003Native biofilms present on the adaxial surface of cotyledons of mung bean sprouts (Vigna radiata) were studied by use of scanning electron microscopy. Biofilms were abundant on the cotyledon surfaces and were comprised of rod-shaped bacteria, cocci-shaped bacteria, or yeasts, often with one type of microbe predominant.
