Sprouting improves the flavour quality of faba bean flours

Food Chemistry, 2021
Flours were made from the sprouted seeds of the low- and high-tannin faba bean cultivars Fabelle, FB9-4, Snowbird, and Snowdrop. Headspace measurements on sprouted flours found the most favourable aroma profiles following 48 h sprouting and 24 h drying at 60 °C.

Evidence for the presence of a [2Fe-2S] ferredoxin in bean sprouts

Biochimica et Biophysica Acta (BBA) - Bioenergetics, 1988
An iron-sulfur protein with properties similar to those of ferredoxins found in the leaves of higher plants has been isolated from bean sprouts--a non-photosynthetic plant tissue. The bean sprout protein has a molecular mass of 12.5 kDa and appears to contain a single [2Fe-2S] cluster.

Increasing Antioxidant Potentials of Mung Bean Sprouts

Current Topics in Nutraceutical Research, 2018
The effects of tea polyphenols and ultraviolet radiation on the growth and antioxidant activity of mung bean sprouts were investigated, followed by the changes in corresponding antioxidant enzyme activities and metabolite composition. The growth of mung bean sprouts was slightly decreased by tea polyphenols and ultraviolet radiation, but the ...

Temperature stimulated changes in potato and bean sprouts

Journal of Food Engineering, 2013
Abstract The potato and bean sprouts were tested using dynamic mechanical analysis (DMA), in air with 90% humidity between 30 and 90 °C. Temperature plots of storage ( SM i.e. elastic) and loss ( LM i.e. inelastic) moduli were obtained. The SM and LM values were the basis for the calculation of the loss tangent ( LT ), the parameter expressing ...

Scanning electron microscopy of native biofilms on mung bean sprouts

Canadian Journal of Microbiology, 2003
Native biofilms present on the adaxial surface of cotyledons of mung bean sprouts (Vigna radiata) were studied by use of scanning electron microscopy. Biofilms were abundant on the cotyledon surfaces and were comprised of rod-shaped bacteria, cocci-shaped bacteria, or yeasts, often with one type of microbe predominant.
