[Study of betacyanin-discolorating enzyme].
Biokhimiia (Moscow, Russia), 1977An enzyme catalyzing the discoloration and breakdown of betacyanins was isolated from beet roots Beta vulgaris by centrifugation in sucrose density gradient (2.5 M, 2.0 M, 1.5 M, 1.0 M, tris-HCl buffer, 0.05 M, pH 7.2), and purified 100-fold. The enzyme activity induced the discoloration of betanin, betanidin.

Betacyanins from plants and cell cultures of Phytolacca americana
Phytochemistry, 1996Betacyanins from cell cultures of Phytolacca americana were characterized and compared with those of the stems and ripening fruits of the plant. Whereas in fruits prebetanin (betanin 6'-O-sulphate) and its isoform predominate, in the stem and cell cultures feruloylated derivatives occur as the major components.

Journal of Agricultural and Food Chemistry, 1998Color, spectral characteristics, and stability of betacyanin pigments of 21 genotypes from 7 Amaranthus species were evaluated. Wide variation in color characteristics and significant differences in pigment stability were found as much within as between Amaranthus species.

The ability of tetraalkylammonium salts to act as ion-pairing agents for betacyanins and mono- as well as bidecarboxylated betacyanins in HPLC on reversed phase is reported. The results indicate substantial and various influences of tetraalkylammonium salt addition to eluent on magnitude and direction of retention time changes of the analytes.

The effect of heating conditions on losses and regeneration of betacyanins
Zeitschrift f�r Lebensmittel-Untersuchung und -Forschung, 1985The losses of Betacyanins during heating at 90 °C and their regeneration after heating were investigated in red beet juice and solutions of pure betanin in different buffers. It was found that the regeneration of pigments during storage of heated samples is greater at 5 °C than at 20 °C.
