Reduction of selected betacyanins [PDF]

open access: yes, 2014
Betacyanins are conjugates of betalamic acid and glycosylated cyclo-DOPA which bring about the creation of a specific chromophoric system, the 1,7-diazaheptamethin chain. Betanin, a betacyanin pigment from red beet (Beta vulgaris L.), as well as its decarboxylated derivatives were subjected to reduction with the use of NaBH4.

Storage Stability and In Vitro Bioaccessibility of Liposomal Betacyanins from Red Pitaya (Hylocereus polyrhizus)

open access: yesMolecules, 2022
In order to address the poor stability of the betacyanins from red pitaya (Hylocereus polyrhizus, HP), which are considered as good sources of natural colorant, liposomal-encapsulation technique was applied in this study. Thin-layer dispersion method was

Comparative Evaluation of Ultrasonic, High Pressure, and Pulsed Electric Field Processing on the Extraction and Storage Stability of Betalains From Red Beet By-Products. [PDF]

open access: yesJ Food Sci
ABSTRACT This study explores the potential of red beet peel (RBP) and red beet stalk (RBS), often underutilized by‐products, as rich sources of natural pigments and bioactive compounds. Three non‐thermal green extraction methods, namely, high‐pressure processing, ultrasound, and pulsed electric field treatment, were evaluated for their efficiency in ...

Exploring the Phytochemical and Physical Stability of Phycocyanin, Anthocyanins, and Betacyanin in a Cheesecake Product. [PDF]

open access: yesMol Nutr Food Res
Phycocyanin, anthocyanins, and betacyanin were tested with various sweeteners (sucrose, fructose, dextrose, xylitol, sorbitol) to assess their impact on color retention, antioxidant activity, and sensory properties. Key parameters investigated include pigment degradation, antioxidant performance, color measurements, and consumer acceptability, offering

Chemical and Bioactive Features of Amaranthus caudatus L. Flowers and Optimized Ultrasound-Assisted Extraction of Betalains

open access: yesFoods, 2021
The vibrant colours of many plants are due to secondary metabolites, such as nitrogen-containing compounds, where betacyanins are included. These compounds can be found in plants such as Amaranthus caudatus L. that, due to their high nutritional benefits,
