Selective Cytotoxicity of Carboxypeptidase-activated Methotrexate ex-Peptides
Methotrexate ex-pep tides (derivatives in which an amino acid is linked covalently to the ex-carboxyl of the glutamate residue on the parent drug) can be hydrolyzed by specific carboxypeptidases to yield free Methotrexate (MTX) and the corresponding ...

Peptide‐based ligand antagonists block a Vibrio cholerae adhesin
The structure of a peptide‐binding domain of the Vibrio cholerae adhesin FrhA was solved by X‐ray crystallography, revealing how the inhibitory peptide AGYTD binds tightly at its Ca2+‐coordinated pocket. Structure‐guided design incorporating D‐amino acids enhanced binding affinity, providing a foundation for developing anti‐adhesion therapeutics ...

An ANN‐Driven Fermenter System for Bacterial Health Assessment During Cocoa Bean Fermentation
The ANN model comprises an input layer (pH, cocoa temperature, fermenter temperature, and humidity) and one output node (bean health prediction). It features four hidden layers (20 nodes/layer), sigmoid activation, and MSE loss, optimized with a 0.01 learning rate, batch size 15, and 100 epochs.

Role of carboxypeptidases to the free amino acid composition, methylpyrazine formation and sensory characteristic of under- fermented cocoa beans [PDF]
The role of carboxypeptidases B (from porcine) and Y (from baker's yeast), applied to under-fermented cocoa beans, on the formation of cocoa-specific aroma precursors, the aroma and sensory quality after roasting was investigated.
