Characterization of Fatty Acid Profiles and Nutritional Quality Indices in Commercial Spreadable Processed Cheeses: Comparative Analysis and Health Implications

open access: yesFood Safety and Health, EarlyView.
Natural processed cheeses showed a more favorable nutritional profile, including higher unsaturated fatty acids and better functional performance. A balanced fatty acid composition was identified as a key factor influencing meltability, oil separation, and overall quality of processed cheeses.

Primary proteolysis of caseins in cheddar cheese

open access: yes, 1993
Studies were undertaken to investigate proteolysis of the caseins during the initial stages of maturation of Cheddar cheese. Isolated caseins were hydrolyzed by enzymes thought to be of importance during cheese ripening and the resulting peptides ...

Identification of caseins in goat milk

open access: yes, 2002
The importance of goat milk in infant diet is growing, because it is reported that goat's milk in some cases is less allergenic than cow's milk. This is due probably to the lower presence of caseins associated with a specific type of alpha(s1)-casein. In

Suitability of animals' purified milk caseins and their subunit ?-caseins as substrates for subtilisin and trypsin

open access: yes, 2001
Acid casein and K-casein were purified from different species of animal's milk, such as cow, sheep, goat, and water buffalo. These caseins were used as substrates for commercially available subtilisin and trypsin.

Marine Macroalgae as a Safe Healthy Food While Meeting Food Security Challenges Arising From Climate Changes

open access: yesFood Safety and Health, EarlyView.
Planned harvesting and processing of marine macroalgae could meet future global food needs and mitigate fuel‐originated carbon dioxide responsible for climate change. Microalgal foods are nutritious and safe. The utilization of macroalgae would avoid environmental problems arising from the release of overgrowing macroalgae caused by heatwaves, which ...

Susceptibility to denaturation of caseins in milk samples for improving protein conformational study and their identification.

open access: yes, 2012
Caseins are phosphoproteins kept together by non-covalent interactions to form a highly stabilised dispersion in milk. This study intended to evaluate the different effects of denaturing solvents and solutions on caseins in order to optimise the ...

Protective Effects of Fenugreek and Stevia Extracts on Dexamethasone‐Induced Testicular Damage in a Rat Model

open access: yesFood Safety and Health, EarlyView.
Fenugreek and stevia extracts protect against dexamethasone‐induced testicular damage in male rats by enhancing antioxidant defenses, improving sperm quality, and restoring hormonal balance, highlighting their potential as natural therapeutics for preventing corticosteroid‐induced reproductive toxicity.

Mixed lineage kinase 3 mediates SARS‐CoV‐2‐induced kidney injury via the Hsp70‐IL‐17A axis

open access: yesInterdisciplinary Medicine, EarlyView.
Kidney samples from patients infected with severe acute respiratory syndrome coronavirus 2 (SARS‑CoV‑2) showed upregulated expression and activity of Mixed Lineage Kinase (MLK3). Based on the mechanistic studies, we identified MLK3 as a critical player in promoting SARS‐CoV‐2‐induced kidney injury.

Caseins Characteristics in Equid and Human Milk [PDF]

open access: yes, 2016
Equid milk is similar in composition to human milk, even if equids and humans are phylogenetically distantly related. The protein content of milk varies considerably between species and reflects the growth rate of the young.
