Effect of Inoculated Lactic Acid Fermentation on the Fermentable Saccharides and Polyols, Polyphenols and Antioxidant Activity Changes in Wheat Sourdough

open access: yesMolecules, 2021
Inoculation of sourdough allows the fermentation medium to be dominated by desired microorganisms, which enables determining the kinetics of the conversion of chemical compounds by individual microorganisms.

A Case‐Based Reasoning Approach to Model Manufacturing Constraints for Impact Extrusion

open access: yesAdvanced Engineering Materials, EarlyView.
A hybrid modeling approach is presented that combines constraint‐based process modeling and case‐based reasoning. The model formalizes manufacturing constraints and integrates simulation data to model complex manufacturing processes. The approach supports manufacturability analysis during product design through an adaptive modeling environment.

Properties, Physiological Functions and Applications of Starch-Lipid Complexes

open access: yesShipin gongye ke-ji
Starch-lipid complexes, the fifth type of resistant starch, result from the binding of starch's long-chain segments with oils or fatty acids, which alters the original starch's structure, properties, and physiological functions.

Assessing the sustainability of post-Green Revolution cereals in India

open access: yesProceedings of the National Academy of Sciences of the United States of America, 2019
Significance Substantial growth in food production has occurred from a narrowing diversity of crops over the last 50 y. Agricultural policies have largely focused on the single objective of maximizing production with less attention given to nutrition ...

Mechanisms of Increasing Weld Depth during Temporal Power Modulation in High‐Power Laser Beam Welding

open access: yesAdvanced Engineering Materials, EarlyView.
Temporal power modulation increases weld depth in high‐power laser beam welding of dissimilar round bars by nearly 20% compared to same average continuously welded welding power. The mechanism of action also applies to sheet welding and depends on the inertia of keyhole depth for the modulated laser beam power.

Fusarium Toxins in Cereals: Occurrence, Legislation, Factors Promoting the Appearance and Their Management

open access: yesMolecules, 2016
Fusarium diseases of small grain cereals and maize cause significant yield losses worldwide. Fusarium infections result in reduced grain yield and contamination with mycotoxins, some of which have a notable impact on human and animal health.

A Novel Approach to Produce Metal–Metal Composites by Leveraging Immiscibility: Laser Powder Bed Fusion of Nanosilver‐Dispersed Titanium

open access: yesAdvanced Engineering Materials, EarlyView.
Incorporating nanosized silver into titanium for antimicrobial materials exploits the metastable miscibility gap between silver and titanium. Silver nanoparticles are synthesized via pulsed laser ablation in liquid. Silver addition refines the microstructure, increases hardness by 30%, and reduces Staphylococcus capitis microbial adhesion by 70%, with ...

Anti-Type II Diabetic Effects of Coix Seed Prolamin Hydrolysates: Physiological and Transcriptomic Analyses

open access: yesFoods
Previous studies have demonstrated that enzymatically prepared coix seed prolamin hydrolysates (CHPs) contain several bioactive peptides that efficiently inhibit the activity of target enzymes (α-glucosidase and dipeptidyl kinase-IV) in type 2 diabetes ...
