The effect of osmotic pretreatment on the mass transfer kinetics and quality of dried rehydrated Chilean papaya was researched. Osmotic treatments were sucrose solutions of 40, 50, and 60% w/w and dried at 60°C; non-pretreated samples were dried at different temperatures (40, 60, and 80°C).

Modeling 3D conjugate heat and mass transfer for turbulent air drying of Chilean papaya in a direct contact dryer

A 3D model considering heat and mass transfer for food dehydration inside a direct contact dryer is studied. The k– e model is used to describe turbulent air flow. The samples thermophysical properties as density, specific heat, and thermal conductivity are assumed to vary non-linearly with temperature.
