古来から日本人の嗜好によくあう漬物は, 食物繊維とビタミン, ミネラルの供給源として効果的である。しかしながら, 残念なことに, 食塩の摂取を増加し, 高血圧発現率にも関係するといわれる。そこで, 低い食塩濃度で漬物としておいしく食べられることを目的として白菜漬物を取り上げ, 研究を進めた。方法として, 即席白菜漬の食塩濃度計によって測定した食塩濃度, 手持屈折計を用いて測定した糖量, pHとそれらの関係を調べた。結果として, 即席白菜漬は夏期は材料の食塩添加2%・12時間経過のもの, 冬期は材料の食塩添加2%・24~36時間経過のものが一番味がよかった。この時の食塩濃度は, 夏期は1.56%, 冬期は1.20~1.24%で, 市販品よりうすくてよい味の即席漬が得られた ...
