Mechanisms of Light-induced Off-flavor Formation Sensitized by Chlorophylls and pH in Citrus Juice
レモンやカボスなどの香酸柑橘果汁飲料において生じた急速に進行する光劣化異臭の生成機構を解明するため試験を行った.クロロフィル類の存在により光劣化異臭の生成が促進されたことより,クロロフィルが光増感物質として促進作用を示していることが分かった.クロロフィルの光増感作用は濃度依存性があり,柑橘果汁中にサブppmオーダーでも存在すると光劣化異臭生成リスクが高まると考えられた.酸性条件下でpHの影響を調べたところ,クロロフィルの光増感作用はpH依存性があり,強酸性領域でクロロフィルの光増感作用は強くなり,弱酸性領域では光増感作用は非常に弱いことを示した.以上のことから,柑橘果汁製品に透明容器を使用する場合クロロフィルの混入をできるだけ避けることが望ましく ...

A fully bio‐based coating was developed using Chitosan, Citric acid, and Curcumin. Citric acid acts simultaneously as a green solvent and non‐toxic crosslinker.
