Rate of browning reaction during preparation of coconut and palm sugar
International Congress Series, 2002Abstract The objective of this research was to analyse the rate of browning reaction during preparation of palm and coconut sugar. Brown colour formation during preparation of coconut sugar at a laboratory scale followed a zero order reaction with a constant of formation (k) equal to 5.15×10−3 AU min−1 (AU=Absorbance Unit).

A Machine Learning Approach for Coconut Sugar Quality Assessment and Prediction
2018 IEEE 10th International Conference on Humanoid, Nanotechnology, Information Technology,Communication and Control, Environment and Management (HNICEM), 2018This study presents a machine learning approach to accurately assess the quality of coconut sugar using RGB values. Python and scikit-learn were used to run the following machine learning algorithms: artificial neural network (ANN), stochastic gradient descent (SGD), k-nearest neighbors (k-NN) algorithm, support vector machine (SVM), decision tree (DT)

An Automated Vacuum Packaging and Sealing Machine for Coconut Sugar Production
2018 IEEE 10th International Conference on Humanoid, Nanotechnology, Information Technology,Communication and Control, Environment and Management (HNICEM), 2018Coconut sugar is a palm sugar made from the sap of the flower bud stem of the coconut palm. It is one of the four major sectors in agriculture in the Philippines. The purpose of the machine is to design and prototype an automated vacuum packaging and sealing machine for coconut sugar.

Color quality assessment of coconut sugar using Artificial Neural Network (ANN)
2015 International Conference on Humanoid, Nanotechnology, Information Technology,Communication and Control, Environment and Management (HNICEM), 2015This paper presents a simple color recognition algorithm using digital image processing techniques and pattern recognition to eliminate the subjectiveness of manual inspection of the quality of coconut sugar based on Philippine National Standard. The image processing was built using MATLAB functions through RGB acquisition.
