Gap Analysis of Metabolic Conversions of Off‐Flavors and Antinutrients in Plant‐Based Substrates

open access: yesComprehensive Reviews in Food Science and Food Safety, Volume 25, Issue 3, May 2026.
ABSTRACT To drastically reduce the carbon footprint of the food production chain, a major shift towards alternatives to conventional meat and dairy products is required. The use of plant‐based proteins is a promising route, but it also comes with challenges: Plant‐based proteins often contain antinutritional factors and off‐flavors, which can ...

The antioxidant activity of some curcuminoids and chalcones [PDF]

open access: yesInflammopharmacology, 2016
The antioxidant properties of the synthetic compound (C1)-(C8), which comprised 7 curcuminoids and a chalcone, were evaluated by two complementary assays, DPPH and β-carotene/linoleic acid. It was found that, in general, the free radical scavenging ability of (C1)-(C8) was concentration-dependent.

Enhancing the Multifunctional Qualities of Palm Oil With Plant‐Derived Essential Oils: An Integrated HPLC and RSM Approach

open access: yesFood Science &Nutrition, Volume 14, Issue 4, April 2026.
The results established that the treatments obviously retard the thermal degradation and hydrolytic decomposition of the palm oil, which can be attributed to the antioxidant effects (high phytochemical content) of the essential oils used as the treatment material. Markedly, the bio‐fortified palm oil samples recorded greater nutritional, physiochemical,

Elucidation of the Relationships between H-Bonding Patterns and Excited State Dynamics in Cyclovalone

open access: yesMolecules, 2014
Cyclovalone is a synthetic curcumin derivative in which the keto-enolic system is replaced by a cyclohexanone ring. This modification of the chemical structure might in principle result in an excited state that is more stable than that of curcumin, which
