A note on the formation of 1,2‐diglycerides
Journal of the American Oil Chemists' Society, 1960AbstractThe reaction of glyceryl esters with fatty acids has been demonstrated to form an equilibrium mixture containing the 1,2‐isomer as well as the 1,3‐isomer previously reported (2). This procedure offers a method of synthesizing simple or mixed 1,2‐diglycerides.

Determination of hydroxyls in mono‐ and diglycerides
Journal of the American Oil Chemists' Society, 1962AbstractA method for the analysis of hydroxyls employing esterification with 3,5‐dinitrobenzoyl chloride, followed by titration with tetrabutylammonium hydroxide, has been applied to mono‐ and diglycerides. Pure mono‐ and dipalmitins were recovered quantitatively. A commercial glyceryl dioleate was analyzed by this method and the A.O.C.S.

Summary We have shown that the enzyme catalyzed isomerisation of 1,2-dipalmitin into the 1,3-isomer occurs with 1,3 regiospecific lipases. The mechanism of this transformation and the crucial role of the water still present in the enzyme preparation are elucidated.
