Digestibility and metabolism of flour from two yam species (D. dumetorum and D. rotundata) in school age children [PDF]

open access: yes, 1995
The digestibility and metabolism in school age children of diets from two yam species (#D. dumetorum$ and #D. rotundata$) are compared. Ten boys age 65 to 84 months, with heights and weights close to NCHS reference values, were fed meals deriving half of

Barrier, Mechanical and Antimicrobial Properties of Yam Starch Film With Cássia Cinnamon Essential Oil and Its Application in Strawberry Storage

open access: yesPackaging Technology and Science, Volume 38, Issue 8, Page 681-697, August 2025.
Chitosan and cinnamon oil reduced film thickness and improved water vapor barrier properties. Cinnamon oil in yam starch films showed strong antibacterial activity against E. coli and S. aureus. Yam starch films with chitosan and cinnamon oil effectively inhibited fungal growth on strawberries.

A new approach to improvement of yam Dioscorea rotundata

open access: yesNature, 1975
EFFORTS to improve the yam, D. rotundata, through hybridisation have been frustrated by the low rate of flowering, the very low rate of fruit setting and poor seed germination1–3. These constraints have confined the availability of genetic resources for selection to the small number of cultivars which have been vegetatively reproduced from time ...

A Critical Overview of Common Foodborne Toxicants and Methods for Their Reliable Detection

open access: yesFood Frontiers, Volume 6, Issue 4, Page 1658-1700, July 2025.
ABSTRACT Food is an essential commodity for human health. However, toxicants such as mycotoxins, heavy metals, acrylamide, and pesticides can be present in food either naturally or through processing, packaging, or some anthropogenic activities. A thorough review of carefully selected studies revealed that climate change and pandemics have led to an ...

Effect of yam (Dioscorea spp.) starch on the physicochemical, rheological, and sensory properties of yogurt

open access: yesHeliyon, 2021
This study investigated the effect of the addition of starch from “hawthorn” yam (Dioscorea rotundata) and “creole” yam (Dioscorea alata) at different concentrations (0.1%, 0.3%, and 0.5% w/w) on the physicochemical and sensory properties of stirred-type

Yield stability of water yam (Dioscorea alata L) landraces compared to improved varieties across multiple environments and their culinary qualities in the Republic of Benin

open access: yesJSFA reports, Volume 5, Issue 7, Page 315-325, July 2025.
Abstract Background In the Republic of Benin, the fresh yam market has two key periods: a time of high availability from August to February, followed by a scarcity from March to July. Fortunately, when Dioscorea rotundata fresh tubers become scarce and expensive, Dioscorea alata (commonly known as Agaabidjan/ Florido) pervades the market and provides a
