Abstract Forty-six commercially available dipeptides, reagent grade, along with 3 L-amino acids were rated on 52 sematic differential scales. A verbal description, as well as a multidimensional representation of the tastes, was obtained. Although many dipeptides have a bitter component, other characteristics were found as well.
