Bee Better: The Role of Honey in Modern Wound Care

open access: yesAdvanced Therapeutics, Volume 8, Issue 5, May 2025.
The use of honey as a wound care agent is controversial but paradoxically increasingly popular. Honey possesses relevant antimicrobial properties and can modulate the immune system. The wound healing properties of honey likely depend on its composition and varies across wound types.

Influence of Produced Water and Light Irradiation on the Composition of Exopolysaccharide Produced by L. amnigena Evaluated by Raman Spectroscopy

open access: yesBiopolymers, Volume 116, Issue 3, May 2025.
Changes in the composition of the EPS produced by L. amnigena in different culture media and irradiated by Laser or LED light sources and studied using Raman spectroscopy showed peaks of fucose, glucose, galactose, glucuronic acid and mannose. PCA showed the presence of acyl groups (mainly pyruvyl) depending on the production conditions and irradiation.

Improving the Nutritional Quality of Instant Noodles Made From Wheat Flour Using Dry and Wet Fractionated Mungbean Protein Ingredients

open access: yesCereal Chemistry, Volume 102, Issue 3, Page 520-536, May/June 2025.
ABSTRACT Background and Objectives The nutritional quality of instant noodles can be improved using dry and wet fractionated mungbean protein ingredients. Wheat flour was blended with mungbean protein concentrate and protein isolate to produce high‐protein instant noodles of around 15%, 20%, and 25% protein.

Evaluation of AOAC‐Method 2017.16: Detection of Oligosaccharides as Low Molecular Weight Soluble Dietary Fiber

open access: yesCereal Chemistry, Volume 102, Issue 3, Page 431-437, May/June 2025.
ABSTRACT Background and Objectives In many countries, the Codex Alimentarius definition of dietary fiber has been adopted with the optional inclusion of oligosaccharides with a degree of polymerization (dp) of ≥ 3. These oligosaccharides are usually captured as low molecular weight soluble dietary fiber (LMWSDF). The suitability of the AOAC‐method 2017.
