Nutritional values of edible Coleoptera (Tenebrio molitor, Zophobas morio and Alphitobius diaperinus) reared in the Czech Republic [PDF]

open access: yes, 2017
Edible insects have gained the status of highly nutritious food with high protein and fat content. However, nutritional value of insects is not constant. It could be affected by species, developmental stage, rearing technology, nutrition or sex.

Insect‐Derived Bioactives for Glycemic Control and Gut Health: A Review

open access: yesFood Frontiers, Volume 7, Issue 2, March 2026.
Insect‐derived bioactive compounds (e.g., peptides, polysaccharides) effectively regulate blood glucose through dual mechanisms: directly inhibiting carbohydrate‐digesting enzymes and glucose transporters, and indirectly modulating gut microbiota to enhance intestinal barrier integrity.

Investigation of the Programmable Deformation of 4D‐Printed Cassava Starch‐Based Gels: Applications in Baked Foods

open access: yesFood Frontiers, Volume 7, Issue 2, March 2026.
Programmable shape transformations of starch‐based foods were achieved by regulating printing parameters and material composition under baking‐induced dehydration. ABSTRACT 4D printing, an evolution of 3D printing, introduces the dimension of time to enable printed structures to undergo transformations when exposed to external stimuli.

Protective Effect of Protaetia brevitarsis Larvae Extract on Alcoholic Liver Disease in Mice

open access: yesFood Science &Nutrition, Volume 14, Issue 3, March 2026.
This study evaluated the hepatoprotective effects of Protaetia brevitarsis larvae water extract (PBLE) in a chronic‐plus‐binge ethanol mouse model. PBLE attenuated hepatic lipid accumulation and liver injury by modulating alcohol metabolism‐related enzymes and reducing oxidative stress and inflammation.

Weizmannia coagulans XY2 Mitigates Copper Neurotoxicity via Gut–Brain Axis Modulation of Tryptophan Metabolism and Oxidative‐Inflammatory Crosstalk

open access: yesiMetaOmics, Volume 3, Issue 1, March 2026.
Copper interferes with tryptophan metabolism and 5‐HT levels by modulating intestinal flora. Intestinal barrier breakdown and inflammatory response trigger nerve damage under copper exposure. W. coagulans XY2 alleviates copper‐induced neurotoxicity by targeting a multi‐dimensional “tryptophan metabolism‐antioxidant defense‐gut‐brain axis” network.

Direct Ambient Mass Spectrometry for Food, Beverage, and Agricultural Sample Analysis and Research

open access: yesMass Spectrometry Reviews, Volume 45, Issue 2, Page 429-452, March/April 2026.
ABSTRACT Ambient and direct mass spectrometry (MS) methods are becoming increasingly used for the rapid analysis of food, beverage and agricultural samples. Novel ionization approaches combined with targeted, or untargeted workflows provide analytical outcomes within a greatly reduced time period compared to traditional separation science coupled with ...
