Abstract Resumen Resumo Peruvian anchovy (Engraulis ringens) is one of the most abundant species in the South Pacific Ocean. In Peru, it is used for fish flour and oil production. Due to the interest of the market to use it for direct human consumption, a shelf life study of the species at 9±1°C was conducted.

Nutritional Characteristics of a Peruvian Anchovy (Engraulis ringens) Protein Concentrate
The aim of the present study is to present a new anchovy protein concentrate and compare it to other similar fishery products. A 76.4% protein concentrate was prepared from fresh Peruvian anchoveta (Engraulis ringens) (APC) by means of acid treatment with 1% citric acid, solubilization with 1% sodium chloride, and isoelectric precipitation processes ...

Employing the production of a polyclonal antibody and the use of indirect enzyme linked immuno sorbent assay (ELISA), we detect Engraulis ringens egg proteins in the guts of a natural predator Euphausia mucronata Sars 1883 in Chilean waters. With a dilution of 1:15,000, the immune serum allowed the detection of 0.1 μg of anchoveta egg protein.
