Study on the Growth and Enterotoxin Production by Staphylococcus aureus in Canned Meat before Retorting

open access: yesToxins, 2019
Possible contamination by Staphylococcus aureus of the production environment and of the meat of a canned meat production factory was analysed. A total of 108 samples were taken from nine critical control points, 13 of them were positive for S.

Staphylococcal Enterotoxin Superantigens

open access: yesExperimental Biology and Medicine, 1991
Staphylococcal enterotoxins (SE) are a family of structurally related proteins that are produced by Staphylococcus aureus. They play a role in the pathogenesis of food poisoning and are the most potent activators of T lymphocytes known. The receptors for SE on antigen-presenting cells are major histocompatibility complex class II molecules.

Detection of Enterotoxigenic Staphylococcus aureus Strains in Raw Milk of Cows Reared in Erbil Province/Iraq

open access: yesZanco Journal of Pure and Applied Sciences, 2019
Raw milk is usually contaminated with enterotoxin-producing Staphylococcus ¬aureus, which is regularly associated with staphylococcal food poisoning. The present study was conducted to investigate the occurrence of Staphylococcus aureus and enterotoxin ...

Diet–Microbiome–Immune Interactions at the Gut Mucosa in Food Allergy: Mechanisms, Gaps, and Therapeutic Implications

open access: yesAllergy, Volume 81, Issue 10, Page 3439-3452, October 2026.
ABSTRACT Mucosal surfaces are sites of highly dynamic interactions among epithelial and immune cells, environmental exposures, particularly dietary inputs, and the diverse microbial communities and their metabolites. These elements continually influence each other to maintain homeostasis and ensure appropriate immune discrimination between pathogens ...

Mast Cells in Host Defense Against Cutaneous Staphylococcus aureus Infection

open access: yesImmunology &Cell Biology, Volume 104, Issue 9, Page 867-880, October 2026.
Impact of S. aureus epicutaneous sensitization models on mast cell function in vivo. D. farinae and Staphylococcal enterotoxin B (SEB) activate Trpv1+ Tac1+ nociceptors to trigger the release of substance P (SP), which promotes mast cell degranulation through Mrgprb2. S.

The expression of selected genes encoding enterotoxins in Staphylococcus aureus strains

open access: yesCzech Journal of Food Sciences, 2009
Staphylococcus aureus is an important food-borne pathogen, which produces many toxic substances that cause a variety of illnesses. Some strains of S. aureus produce thermostable enterotoxins that can be responsible for alimentary intoxication. The aim of
