羊臀脂多级干法分提产物的脂肪酸组成及理化特性分析Analysis of fatty acid composition and physicochemical properties of multi-stage dry fractionation products of sheep rump fat

旨在为羊油精细化利用及相关产品开发提供理论基础，以羊臀脂为原料制备粗提羊油，通过梯度养晶温度（28、23、18、13、8 ℃），在养晶时间9 h与降温速率8 ℃/h的条件下，对粗提羊油进行多级干法分提，并对各级分提产物进行脂肪酸组成和理化性质分析。结果表明：28 ℃固脂得率最高，为50.63%；随着养晶温度的降低，各分提组分不饱和脂肪酸含量上升，液油不饱和脂肪酸含量从46.78%（粗提羊油）增至56.75%（8 ℃液油），固脂不饱和脂肪酸含量增至52.85%（8 ℃固脂）；8 ℃液油熔点最低（9.1 ℃）
