Impact of Low‐Dose Cranberry Polyphenols on Gut Microbiota and Circulating Polyphenol Metabolites in Overweight and Obese Individuals (A Randomized Double‐Blind Placebo‐Controlled Clinical Pilot Study)

open access: yesFood Science &Nutrition, Volume 14, Issue 6, June 2026.
The health‐promoting effects of cranberry are largely attributed to its polyphenol content, which is known to reach the colon in largely unmetabolized form. The cranberry group significantly elevated catechol‐O‐sulfate levels compared to the placebo group.

Effect of Chitosan, Aloe vera Gel and Coconut Oil Edible Coatings on Postharvest Quality and Shelf Life of Strawberry (Fragaria × ananassa Duch) Under Ambient Storage

open access: yesFood Science &Nutrition, Volume 14, Issue 6, June 2026.
Postharvest application of eco‐friendly edible coatings consisting of chitosan solution (CH), Aloe vera gel (AVG), and coconut oil (CO) on strawberry fruit under ambient conditions. Six distinct formulations (CH, AVG, CO, CH + AVG, CH + CO, and AVG + CO) along with a distilled water (control) were analyzed.

The Potential Alleviating Property Against NAFLD by Ganoderma lucidum With Bacteria‐Enzyme Synergistic Fermentation

open access: yesFood Science &Nutrition, Volume 14, Issue 6, June 2026.
A bacteria‐enzyme synergistic fermentation process using Lactobacillus rhamnosus was developed to produce fermented Ganoderma lucidum broth (FBG), which significantly enriched ganoderic acid F compared to water extraction. In FFA‐induced HepG2 cells, FBG alleviated NAFLD‐related damage by reducing lipid deposition, ROS, MDA, TC, TG, and LDL‐C, while ...

Optimization of Ultrasound‐Assisted Extraction Conditions for Phenolic Content and Antioxidant Activity in Green Mango Peel Using Response Surface Methodology

open access: yesFood Science &Nutrition, Volume 14, Issue 6, June 2026.
Ultrasound‐assisted extraction (UAE) was applied to green mango peel to enhance the recovery of phenolic compounds and antioxidant activity. Response surface methodology was used to optimize extraction parameters, including temperature, time, and ethanol concentration.
