Access to Affordable, Nutritious Food Is Limited in “Food Deserts” [PDF]

open access: yes, 2017
A small percentage of U.S. households live in “food deserts,” where access to a supermarket or large grocery store is a problem. Low-income households often leave food deserts to shop where food prices are lower.

Evaluation of a Mobile Farmer's Market Aimed at Increasing Fruit and Vegetable Consumption in Food Deserts: A Pilot Study to Determine Evaluation Feasibility

open access: yesHealth Equity, 2018
Purpose: In November 2015, Greater Pittsburgh Community Food Bank implemented a pilot phase of the Green Grocer mobile market, a program aimed at improving access to locally sourced fresh foods in low-resource neighborhoods. We conducted an evaluation of

Are coastal deserts necessarily dew deserts? An example from the Tabernas Desert

open access: yesJournal of Hydrology and Hydromechanics, 2020
Vapor condensation, whether due to dew or fog, may add a stable and important source of water to deserts. This was also extensively assessed in the Negev, regarded as a dew desert.

Design and Synthesis of Peptide‐Polyester Conjugates for Cell‐Mediated Scaffold Degradation

open access: yesAdvanced Healthcare Materials, EarlyView.
This work describes polycaprolactone (PCL)‐based biomaterials engineered to degrade in response to cell‐secreted proteases. A fast‐degrading peptide (Fast) sequence is integrated into a PCL conjugate backbone to produce a biomaterial that is selectively degraded by multiple cell types compared to its scrambled control (ScrFast).

Overcoming the Challenges of Food Deserts

open access: yes, 2021
This thesis observes and finds ways to mitigate the problems food deserts create for low-income communities. Food deserts are areas that do not have a supermarket within 5-to-10-mile radiuses.

New resources for smart food retail mapping a GIS and the open source perspective [PDF]

open access: yesJournal of Spatial and Organizational Dynamics, 2016
In this paper it is demonstrated that open-source GIS software may contribute to allow nonprofit organizations and local food retailers to strategically locate food shops. This impacts realtors and other businesses as well.

Tracking Spatiotemporal Extracellular Matrix Evolution and Tissue Fusion in 3D Microtissues via Click Chemistry‐Based Metabolic Labelling

open access: yesAdvanced Healthcare Materials, EarlyView.
Metabolic labeling of nascent proteins in 3D microtissue spheroids provides a powerful analytical approach for large‐scale tissue engineering. Incorporation of non‐canonical amino acids with fluorescent tagging enables spatiotemporal investigation of extracellular matrix deposition and its evolution during multicellular tissue development and fusion ...

Is Local Food More Expensive? A Grand Rapids Case Study

open access: yes, 2012
Is locally produced food more expensive than non-locally produced food? As Americans become more aware of how their food is produced and where it is sourced, this question becomes more pertinent. This study compares prices for local fruits and vegetables,
