A method for producing gallic acid by microbiological hydrolysis of the tannins of myrobalan seed powder is described in the present work. Hydrolysis of gallotannins of the substrate to gallic acid by Aspergillus niger MTCC 282 was studied.

Abstract A method for the determination of traces of gallotannins in beer, in the presence of other natural tannins, has been developed. The procedure is based on the formation of a deep blue iron-tannin complex which is evaluated spectrophotometrically at 530 nm.
