An inclusive insight on dietary resistant protein and protein hydrolysates: Structural intricacy, bioactivity and benefits on human health

open access: yesFood Biomacromolecules, EarlyView.
Abstract This assessment explores the health benefits of resistant proteins and protein hydrolysates in human nutrition, highlighting their bioactive properties and amino acid compositions. Resistant proteins, which withstand digestion and operate comparably to dietary fibre and protein hydrolysates, obtained from enzymatic breakdown of proteins ...

Evaluation of the allergenicity of ω5-gliadin-deficient Hokushin wheat (1BS-18) in a wheat allergy rat model

open access: yesBiochemistry and Biophysics Reports, 2019
We previously developed Hokushin wheat line as a hypoallergenic wheat lacking ω5-gliadin (1BS-18), a major allergen for wheat-dependent exercise-induced anaphylaxis. However, the allergenicity of 1BS-18 has not been understood completely.

Wheat Fermentation With Enterococcus mundtii QAUSD01 and Wickerhamomyces anomalus QAUWA03 Consortia Induces Concurrent Gliadin and Phytic Acid Degradation and Inhibits Gliadin Toxicity in Caco-2 Monolayers

open access: yesFrontiers in Microbiology, 2019
Foods containing high amounts of either phytic acid or gliadin can pose a risk for development of iron deficiency and celiac disease, respectively.

Small angle neutron scattering contrast variation reveals heterogeneities of interactions in protein gels [PDF]

open access: yes, 2016
The structure of model gluten protein gels prepared in ethanol/water is investigated by small angle X-ray (SAXS) and neutrons (SANS) scattering. We show that gluten gels display radically different SAXS and SANS profiles when the solvent is (at least ...

Improvement of cereal‐ and legume‐derived protein quality with selenium and sulfur for plant food production

open access: yesJournal of the Science of Food and Agriculture, EarlyView.
Abstract Selenium (Se) is essential for human and animal health and nutritional status. As humans cannot produce Se, it must be obtained from the diet. Adequate Se supplementation improves innate immunity, increases antioxidant capacity and helps prevent various disorders.

Natural Products in Favor of Food Safety: Development of Nanoparticles Based on Tea Tree Oil and Corn Starch and Their Potential for Fresh Food Protection

open access: yesStarch - Stärke, EarlyView.
Starch nanoparticles loaded with tea tree oil prepared by emulsification displayed spherical nanometric morphology, were capable of inhibiting the growth of Candida albicans in a lower concentration than tea tree oil. Fruit coated with the emulsion nanoparticles showed increased shelf life than the uncoated ones.

The influence of long-term inputs of catch crops and cereal straw on yield, protein composition and technological quality of a spring and a winter wheat [PDF]

open access: yes, 2011
Under conditions of restricted nitrogen (N) input such as in organic farming systems, crop N uptake must rely on N mineralised from applied animal manure, crop residues and native soil organic matter.

European Consensus on Malabsorption—UEG & SIGE, LGA, SPG, SRGH, CGS, ESPCG, EAGEN, ESPEN, and ESPGHAN. Part 1: Definitions, Clinical Phenotypes, and Diagnostic Testing for Malabsorption

open access: yesUnited European Gastroenterology Journal, EarlyView.
ABSTRACT Malabsorption is a complex and multifaceted condition characterised by the defective passage of nutrients into the blood and lymphatic streams. Several congenital or acquired disorders may cause either selective or global malabsorption in both children and adults, such as cystic fibrosis, exocrine pancreatic insufficiency (EPI), coeliac ...

Pediatric Autoimmune Pancreatitis: Clinical Findings and Outcomes in Sweden

open access: yesUnited European Gastroenterology Journal, EarlyView.
ABSTRACT Introduction Pediatric autoimmune pancreatitis (AIP) is a rare form of pancreatitis in children with poorly understood pathophysiology. It is a recognized risk factor for chronic pancreatitis in approximately 4% of pediatric cases. This study aims to describe the demographics, clinical characteristics, and outcomes of a large Swedish cohort of
