Neutron macromolecular crystallography enabled by deuteration of biomolecules reveals how the opportunistic pathogen Pseudomonas aeruginosa utilizes calcium‐dependent lectin for binding to human sugars. Soybean residue exhibits poor water holding capacity (WHC) due to high insoluble dietary fiber (>95%).
