Neutron Crystallography Study of Host–Pathogen Recognition Enhanced by Hydrogen/Deuterium Exchange on Carbohydrates

Neutron macromolecular crystallography enabled by deuteration of biomolecules reveals how the opportunistic pathogen Pseudomonas aeruginosa utilizes calcium‐dependent lectin for binding to human sugars. Neutron diffraction on the complex highlights hydrogen bond network, protonation of amino acids and role of calcium ion.

Water‐Holding Capacity Regulation of Dietary Fibers in Soybean Residue: From Modification Strategies, to Function Improvement and Food Texture Optimization

Soybean residue exhibits poor water holding capacity (WHC) due to high insoluble dietary fiber (>95%). Modification strategies (physical, biological, and chemical) enhance WHC by altering fiber structure/function, enabling optimized food texture and functional food development in meat, bakery, dairy, and other food systems.

Abstract The influence of pretreatment of rice bran oil using fluorescent and sunlight radiations on its colour and their influence on its chemical composition and oxidative stability were assessed. Rice bran oil was stored under sunlight, fluorescent light and ambient conditions for 60 days. Oil samples were collected every 15 days for analysis.
