Red seaweed extracts have potential to protect DHA‐rich emulsions against oxidation while maintaining their physical stability. Their combined antioxidant and interfacial properties make them promising clean‐label ingredients for omega‐3‐enriched foods.

The Development and Properties of alginate/κ‐carrageenan Hydrogel: Beeswax Oleogel Bigels
Alginate/κ‐carrageenan hydrogel and beeswax/palm oil oleogel were combined to produce bigels with high oleogel retention and pH‐responsive behavior. Hydrogel composition, oleogel concentration, and hydrogel‐to‐oleogel ratio influenced bead microstructure, mechanical properties, and swelling characteristics.
