Hurdle technology for jabuticaba nectar preservation
Journal of Food Processing and Preservation, 2021Jabuticaba is a berry consumed as fresh fruit, and it may also be processed into nectar. This study targeted the preservation of jabuticaba nectar through hurdle technology. A high‐acid nectar was formulated, pasteurized at 85°C/30 s, ultraclean bottled, and stored at 5°C.

The Hurdle Technology Metaphor Revisited
Food Engineering Reviews, 2020In the original and variants of the hurdle technology metaphor, factors affecting a food preservation process’s efficacy are represented by horizontally spaced athletic hurdles that the targeted microbes have to overcome or expire. But while the utility of combined preservation methods and exploiting synergism is not in doubt, there are issues with the

Charqui meats are hurdle technology meat products
Food Reviews International, 1998Abstract Charqui meat is a tropical intermediate meat product formulated using hurdle technology, a concept described by Leistner (1,2). Salt, sodium nitrite, dehydration, and packaging are hurdles sequentially applied to inhibit deteriorating microorganisms with the possibility of selecting desirable microbiota. This would characterize charqui and its

Hurdle Technology in Food Preservation
2014Most of the food products in the market are preserved (i.e. retained its stability) based on more than one hurdle or preservation method. In order to determine the food stability, two questions need to be asked: what target attribute(s) needs to be achieved in the microbial, chemical, bio-chemical and physical changes; and what is the required time ...

Hurdles in Technology Transfer Between Industries
Aerospace, 1996Abstract It has long been the goal of structural composites producers to achieve aerospace quality composites using automotive production methods. It was hoped that by drawing on the best of the two industries, the goal could be achieved. However, too often, when put together, the two seem to be speaking different languages.
