Cold‐adapted bidomain enzymes have the potential to foster industrial sustainability by reducing energy consumption and greenhouse gas emissions. Despite their allure, these benefits are unattainable as the molecular basis of cold adaptation remains elusive and there are no strategies to guide the acquisition of this behavior.

Lactic acid bacteria isolated from traditional Iranian butter with probiotic and cholesterol‐lowering properties: In vitro and in situ activity

Traditional Iranian butter samples were collected from different parts of Iran and were screened for the presence of Lactic acid bacteria. The selected LAB were identified to species level by biphasic approach. The ability of selected LAB to lower the cholestrol both in vitro and in situ was then determined.
