Effects of fermentation on protein digestion and peptide release in an in vitro adult digestion model

open access: yesFood Research International
Fermented milk is considered a functional food, while how the fermentation influences the protein digestion and especially the peptide formation during digestion is not fully understood. Therefore, pasteurized whole milk (W) was compared with two fermented samples obtained by fermenting W with Lactobacillus bulgaricus in combination with ...

Ionizable Lipid‐Dependent Optimization of Steroid Lipid Nanoparticles With Tunable Immunomodulatory Properties

open access: yesAdvanced Materials, EarlyView.
A novel engineering strategy that establishes material design principles for incorporating anti‐inflammatory steroids into lipid nanoparticles to reduce LNP‐induced inflammation while retaining mRNA delivery. Results are validated in vitro and in three animal models of inflammation and autoimmunity in vivo.

Programmable Functional Silicification of DNA Origami Nanostructures

open access: yesAdvanced Materials, EarlyView.
This work introduces additional functionality into silica‐coated DNA origami nanostructures using non‐standard silica precursors. A fluorescent precursor enables enhanced intracellular tracking, while a disulfide‐containing reagent yields redox‐responsive, degradable silica coatings.

Structural prope rties, functional evaluation, and in vitro protein digestibility of black and yellow quinoa (Chenopodium petiolare) protein isolates

open access: yesCyTA - Journal of Food, 2019
In this work, the structural and functional properties of proteins from black and yellow quinoa were assessed as well as the in vitro digestibility. Black quinoa flours contained higher amounts of crude fiber and lower amounts of total starch compared to

Photoacoustic Nanotagging for In Vivo Tracking and Optimization of Macrophage Immunotherapy in Solid Tumors

open access: yesAdvanced Materials, EarlyView.
Macrophage‐based immunotherapy for solid tumors is limited by poor tracking of cell localization and persistence. This study introduces nanotagged macrophages enabling near‐infrared photoacoustic imaging for real‐time monitoring. IFNγ‐conjugated tags enhance antitumor polarization without harming viability.

Ionic Gating of Liquid‐Crystal‐Like Pteridine Assemblies Enables Tunable Light Scattering

open access: yesAdvanced Materials, EarlyView.
Tunable optical properties emerge through developmentally regulated ionic gating, which transforms disordered, ultraviolet (UV)‐absorbing organelles into concentrically ordered, liquid‐crystal‐like light scatterers. By integrating analyses of pteridine composition, potassium‐dependent assembly, hierarchical ultrastructure, and optical behavior, the ...
