A new procedure to extract intramuscular fat (IMF) was developed to minimize sample amount, solvent use and time of analysis. Lyophilised samples (200mg) were accurately weighed in a safe-lock micro test tube, homogenized in 1.5 mL dichloromethane-methanol (8:2) and mixed in a mixer mill (MM400, Retsch technology).

To meet consumers' needs, a long‐term goal of broiler breeders is to decrease AFC and improve the IMFC simultaneously.

Measuring intramuscular fat in beef with ultrasonic frequency analysis

Frequency analysis of Fourier spectra from ultrasonic signals was used for predicting intramuscular fat content of beef tissue. The most significant parameter in the frequency domain for predicting intramuscular fat concentration in beef was the number of local maxima.
