Factors affecting intramuscular fat content in pigmeat

Zbornik sažetaka 59. hrvatskog i 19. međunarodnog simpozija agronoma
The intramuscular fat (IMF) content, especially in pigs, significantly impacts its meat quality. In the context of genetics, this fat level varies across species, breeds, and even between different types of muscles within a breed. Environmental factors like nutrition significantly contribute to this variation, as well as the factors like gender and age.

Quantification of intramuscular fat in fish by MRI

2014
The aim of this work was to test the MRI water/fat separation methods used in clinical applications, for the quantification of intramuscular lipids on salmon cutlets. Results were validated using NMR. MRI images of 30 cutlets were acquired at 1.5T at 6 acquisition times, allowing the computation of water-only and fat-only images.
