Cheddar and mozzarella cheesemaking characteristics of bovine milks containing k-casein A and B variants [PDF]

open access: yes, 1999
This investigation studied the influence of K-casein A and B variants on the composition, production and for the first time the pilot-scale Cheddar and low moisture part-skim Mozzarella cheesemaking properties of milks from Irish Holstein Friesians ...

Antioxidant activity and identification of food proteins by digestive enzyme supplementation and fermentation with Lactobacillus kefiri

open access: yesCzech Journal of Food Sciences, 2019
Casein, gluten, and soy protein are widely used in food processing for structure, texture, and flavour improvement. These large proteins might be hydrolysed to shorter peptides or amino acids, which provide antioxidant activities through enzymatic and ...

Protein–Anthocyanin Interactions in Food Systems: A Reaction‐Network Perspective on Equilibria, Kinetics, and Degradation Pathways

open access: yesChemFoodChem, EarlyView.
Protein–anthocyanin interactions are reinterpreted beyond binding affinity through a reaction‐network perspective. Distinct protein classes modulate anthocyanin behavior through equilibrium shifts, matrix‐driven protection, self‐assembly, or covalent conjugation.

Molecular genetic polymorphism at the κ-casein and β-lactoglobulin loci in Finnish dairy hulls

open access: yesAgricultural and Food Science, 1993
Dairy bulls have been genotyped for K-casein and P-lactoglobulin from semen samples by methodology based on a polymerase chain reaction (PCR), In this study, a previously described method for κ-casein A and B variants was extended to cover also the ...

EFFECT OF k-CASEIN POLYMORPHISM ON MILK COMPOSITION IN OROBICA GOAT

open access: yes, 2007
The aim of this work was to study the effects of isoelectrofocusing (IEF) milk protein variants on milk composition in the Italian Orobica goat breed, which is characterized by a rather high frequency of the kappa-casein (CSN3) B-IEF allele. Significant associations were found between the IEF phenotype and protein and casein percentages.

The Impact of Glycation on Protein Digestibility

open access: yesChemFoodChem, EarlyView.
Schematic overview of how protein glycation affects digestibility and downstream nutritional consequences. Glycation‐derived structural modifications reduce protease accessibility, leading to limited hydrolysis and altered peptide generation. These changes decrease amino acid bioavailability and may subsequently contribute to microbiome alterations ...

Interaction of .ALPHA.s1-k-casein complex with alkaline-earth-metal ions.

open access: yesAgricultural and Biological Chemistry, 1977
Interaction of αS1-κ-casein complex with Ca2+, Ba2+, Mg2+ and Sr2+ was investigated. On the addition of 0 to 11 mM of these ions, the sedimentation coefficients of αS1-κ-casein complex increased gradually with the rise of concentration of the ions. On the addition of more than 11 mM of Ca2+ and Ba2+, a new peak with a higher sedimentation coefficient ...

Localization of glycosylated κ-casein in bovine casein micelles by lectin-labelled gold granules [PDF]

open access: yes, 2017
The localization of glycosylated k-casein in isolated bovine casein micelles was investigated at the ultrastructural level with gold granules labelled with the Ricinus communis lectin specific for galactose.

Comparison of Cholesterol Lowering Diets: Apple, Casein Cytochrom P450 protein and Cholesterol 7α Hydroxylase Activities in Hamsters [PDF]

open access: yes, 2010
Lithogenic diet, casein and apple fiber diets were fed to hamsters for 3-5 weeks. For control group, animals were fed on normal Purina chow without any supplement.

Antimicrobial Peptides and Peptidomimetics in Foods – A Synthetic Foray

open access: yesChemFoodChem, EarlyView.
This Review discusses AMPs in foods and their syntheses. It espouses facile methods to make them accessible and suggests their utility in the mitigation and eradication of the burgeoning maladies of antimicrobial and multidrug resistance (AMR and MDR).
