Frequencies Evaluation of β-Casein Gene Polymorphisms in Dairy Cows Reared in Central Italy

open access: yesAnimals, 2020
The majority of proteins in cow’s milk are caseins, which occur in four groups (α-s1, α-s2, β, and k) encoded by different genes (CSN1S1, CSN1S2, CSN2, and CSN3, respectively).

Developing Metal–Polyphenol Network‐Based Single‐Protein Particle Encapsulation System for Sustained Release of Whey Protein to Mitigate Sarcopenia

open access: yesAdvanced Science, EarlyView.
Sarcopenia has emerged as a major health challenge in the aging population. Developing a sustained‐release system for whey protein may enhance its effectiveness in mitigating sarcopenia. Herein, a novel “single‐protein particle encapsulation” (SPPE) system is developed to protect whey protein and control its release.

Physiochemical characteristics and fermentation ability of milk from Czech Fleckvieh cows are related to genetic polymorphisms of -casein, -casein, and -lactoglobulin [PDF]

open access: yesAsian-Australasian Journal of Animal Sciences, 2019
Objective The aim of the study was to find a possible association between the β- and κ-casein and β-lactoglobulin genotypes and important milk physiochemical and technological characteristics such as acidity, alcohol stability, the contents of some ...

Sarbecoviruses Suppress Innate Immunity by Recruiting PPM1A to Modulate STAT2 and ORF9b Phosphorylation

open access: yesAdvanced Science, EarlyView.
Sarbecovirus ORF9b recruits host phosphatase PPM1A to suppress innate immunity through dual mechanisms. PPM1A directly dephosphorylates ORF9b to sustain its activity and indirectly downregulates STAT2 phosphorylation to impair interferon signaling. Pharmacological inhibition of PPM1A restores antiviral responses and limits sarbecovirus replication ...

Studies on the functions of disulfide linkages in k-casein

open access: yes, 1974
A three part investigation is described in which a method for measuring SH and SS contents of K-casein and some other food proteins, utilizing Ellman's reagent, was developed. The role of disulfide groups in the stability of heated K-casein,i was studied

Effect of Biomolecule: Casein, Κ-carrageenan and high melting fat fraction of milk on quality and shelf life of dark chocolate and polymorphic conversion of cocoa butter [PDF]

open access: yesBIO Web of Conferences
This study evaluated how three biomolecules—casein, κ-carrageenan, and a high-melting milk fat fraction—affect dark chocolate quality, shelf life, and the polymorphic conversion of cocoa butter. Chocolate exposed to elevated temperatures during transport

ELF5‐Mediated Enhancer–Promoter Interaction Regulates LALBA Expression in Ovine Mammary Gland

open access: yesAdvanced Science, EarlyView.
In the study, we systematically investigate the epigenetic mechanisms underlying lactation traits in sheep by integrating transcriptomic, chromatin accessibility, histone modification, and functional analyses. We identify a super‐enhancer at the LALBA locus and demonstrate that enhancer E4 functions as its core regulatory element.

Genetic polymorphism of milk protein loci in Argentinian Holstein cattle

open access: yesGenetics and Molecular Biology, 2000
Some alleles of milk protein loci are associated with superior cheese production characteristics. The genetic polymorphism of the milk protein loci alphas1-casein, beta-casein, k-casein and beta-lactoglobulin was examined in Argentinian Holstein cattle ...

Use of Mass Spectrometry to Profile Peptides in Whey Protein Isolate Medium Fermented by Lactobacillus helveticus LH-2 and Lactobacillus acidophilus La-5

open access: yesFrontiers in Nutrition, 2019
Peptides in the 3-kDa ultrafiltrate of fermented whey protein isolate (WPI) medium could be responsible for the antivirulence activity of Lactobacillus helveticus LH-2 and Lactobacillus acidophilus La-5 against Salmonella Typhimurium.
