The possibility of the existence of konjac glucomannan (KGM) single helix in dilute solution was discussed finely by ultraviolet-visible spectrophotometer (UV-Vis) with Congo red complex, viscosimetry and circular dichroism (CD). KGM bound to Congo red and the λ max characteristic shifted markedly to longer wavelength (514 nm) in 0.25 M aq NaOH.

Differential thermal analysis (DTA) thermographs show PKGM having certain degree of substitution (DS) gave a new crystalline peak at higher temperature. Ultrasonic Effect on Konjac Glucomannan Molecular Dimension

In this paper, the ultrasonic effect on konjac glucomannan(KGM) molecular dimension was discussed. The KGM polarity, molecular weight(Mw) and conformation were analyzed by digital polarimeter and LLS. The result indicated that the polarity change influenced by ultrasonic accorded with linear function equation.
