Decomposition of L-Malic Acid in Musts with Schizosaccharomyces pombe

果実酒の微生物学的減酸方法の一つとして, 果膠中のリンゴ酸を酵母によって分解させる方法について検討した。1.わが国のブドウ酒膠から分離した酵母を主とする14属50種84株の酵母から果汁中でl一リンゴ酸を特に強く分解するものとしてSchiz.pombe5株を選び出した。その内の1株 (0-77) について醸造学的性質を試験したところ, アルコール生産力, 亜硫酸耐性, 高糖濃度耐性などはブドウ酒酵母と同等以上で, 増殖速度がやや遅く, 低温に弱い性質のものであった。2.ブドウ3品種, リソゴ1品種を原料にして上記菌株0-77を酒母として試験醸造したところ, 発酵温度25℃ 附近では, 果膠の野生酵母を除去しなくても酒母を酵の2%(赤ブドウ, リンゴ) または5%(白ブドウ) 添加すれぽ ...
