Early metabolic imprinting events increase marbling scores in fed cattle

Journal of Animal Science, 2014
Early weaning of calves to a high concentrate diet results in greater fat deposition and suggests early postnatal metabolic imprinting events may be exploited as a management tool to improve cattle value. Our objective was to implement a short, high energy dietary intervention before a typical grazing period to manipulate intramuscular fat deposition ...

Prediction of marbling score and carcass traits in Korean Hanwoo beef cattle using machine learning methods and synthetic minority oversampling technique.

Meat Science, 2019
Pricing of Hanwoo beef in the Korean market is primarily based on meat quality, and particularly on marbling score. The ability to accurately predict marbling score early in the life of an animal is extremely valuable for producers to meet the ...

Prediction of chemical intramuscular fat and visual marbling scores with a conveyor vision scanner system on beef portion steaks.

Meat Science, 2023
This study describes the performance of a Marel conveyer vision scanner, across beef carcases (n = 102) from a wide visual marbling score range, in its ability to predict chemical intramuscular fat (IMF%), Meat Standards Australia (MSA) and AUS-MEAT ...

Adding value to beef portion steaks through measuring individual marbling.

Meat Science, 2023
The current Meat Standards Australia (MSA) and AUS-MEAT grading system assumes that marbling through the M. longissmus thoracis et lumborum (loin) is represented by the score of the grading site. However, studies have indicated marbling varies within the

Prediction of consumer palatability in beef using visual marbling scores and chemical intramuscular fat percentage

Meat Science, 2021
With development of objective technologies that can predict chemical intramuscular fat percentage (IMF%), there is a need to understand the relationships between existing marbling traits, IMF% and eating quality. This study utilised historical carcass data (n = 9641 observations) from the Meat Standards Australia (MSA) industry research dataset and ...

Relationship of ultrasound speckle to marbling score in cattle.

Journal of Animal Science, 1990
A subjective, but repeatable, scoring system was devised to quantitate ultrasound speckle in tomograms of the longissimus muscle over the 12th rib. Speckle scores in 11 of 14 groups of cattle (n = 619) were highly correlated (P less than .001) with carcass marbling score.

Comparing AUS-MEAT marbling scores using image analysis traits to estimate genetic parameters for marbling of Japanese Black cattle in Australia

Animal Production Science, 2013
The aim of the present study was to evaluate the application of image analysis for Japanese Black cattle in Australia (Australian JB). Therefore, we assessed meat quality using an image analysis method to estimate the heritability of this trait in Australian JB.
