Moniliformin production byFusarium species isolated from Argentinian corn

Forty-one isolates ofFusarium obtained from the main Argentinian corn production area were tested for their ability to produce moniliformin. One of 22 isolates ofF. moniliforme, 2/10 of F.proliferatum and 3/9 ofF. subglutinans, produced moniliformin in a range between 0,3 to 2,7 mg/g.

[Detoxification of moniliformin].

Moniliformin is highly toxic to animals. It can be detoxified by treating with Ozone (O3). The structure of moniliformin treated with O3 was analysed by means of IR and NMR spectrum etc. It was proved that the double bond was disappeared and the 4-C ring structure was opened.

Enzyme-Assisted Extraction of Moniliformin from Extruded Corn Grits

Reduction of Moniliformin in Corn by Heat Processing

ABSTRACT: The effects of autoclaving, baking, extrusion, frying, and roasting on the stability of moniliformin (MON) in spiked (5 μg/g of MON) corn‐based food products were investigated. Roasting corn meal at 218 °C for 15 min had the most significant effect (p ≤ 0.05) on the reduction of MON (44.6%).
